A rare single cultivar matcha from Kagoshima, Japan, crafted from carefully shaded first-harvest leaves. Tsuyuhikari, meaning “Dew Light” - is prized for its vibrant emerald green color, velvety smooth texture, and beautifully layered flavor profile. Expect bright grapefruit-like freshness, soft roasted nutty notes, deep umami, and a long creamy finish with minimal bitterness. Stone-milled in small batches and available in limited quantities.

Tsuyuhikari (often referred to as “Dew Light”) is a relatively rare Japanese tea cultivar celebrated for its exceptionally vibrant green color, smooth umami, and refreshing aromatic profile. Naturally rich in theanine and lower in bitterness, this cultivar produces a beautifully balanced matcha that feels soft, layered, and elegant with every sip.
Stone-milled from carefully shaded first-harvest leaves, our Hikari Matcha is deeply creamy, velvety smooth, and remarkably easy to drink - whether enjoyed as a traditional usucha or whisked into an iced matcha.
Because of its naturally smooth profile and lower astringency, Hikari is especially beautiful when prepared with cold water, allowing its sweetness and citrusy brightness to shine through.

Grown in the fertile volcanic soils of Kagoshima, this matcha benefits from the region’s rich terrain, misty climate, and ideal tea-growing conditions. Kagoshima is known for producing exceptionally aromatic, vibrant teas with depth and complexity.

Hikari opens with a refreshing citrusy & sweet lift reminiscent of grapefruit zest, followed by soft nutty undertones similar to roasted cashew or chesnut. The finish is long, creamy, and deeply umami-forward without overwhelming bitterness or astringency.

The aroma is clean and uplifting with hints of young tea leaves, steamed greens, and delicate sweetness - reminiscent of walking through misty tea fields after rain.

HOW TO PREPARE ⌃
For a traditional matcha experience, follow these steps:
- Sift: 2-4 grams (about 1 teaspoon) of matcha powder into a bowl to remove any clumps.
- Add Water: Pour 60-70 ml of hot water (around 80°C) over the powder. Avoid boiling water to maintain its delicate flavors.
- Whisk: Use a bamboo whisk (chasen) in a zig-zag motion until frothy, creating a layer of fine bubbles on the surface.
- Milk of Choice: 150-200 ml of warmed/cold milk or milk alternative (Soy, Oat or Almond). Sweeten as desired (Honey, Maple Syrup, Vanilla Syrup)
